Give your unused veg and peelings tasty new appeal with these three super-easy hacks... <h2>Veg peelings crisps</h2>For a delicious and crunchy homemade crisps, slice leftover root veg thinly, drizzle with oil, then bake. Make them from peelings too! 1. Preheat the oven to 200C/180C Fan/Gas 6. 2. Take peelings from root vegetables such as parsnips, white potatoes and sweet potatoes that have been scrubbed clean. 3. Toss them with thinly sliced disks of carrot and raw beetroot (scrubbed clean but unpeeled) in a generous drizzle of rapeseed oil, black pepper and fennel seeds. 4. Spread in single layers across baking trays lined with non-stick baking paper and cook for 12-15mins, until crisp and beginning to brown. 5. Toss with some chopped fresh dill or parsley and cool fully. The peelings with crisp up more as they cool.  <h2>Use veg peelings to make stock </h2>Well-scrubbed root veg peelings are perfect for an easy-to-make freezable stock. Throw in any spare veggies that are past their best. 1. Put any peelings from scrubbed clean veg into a saucepan with a whole halved onion, some celery, a few black pepper corns, any wilting fresh herbs and a bay leaf.2. Cover in plenty of cold water and bring to a simmer. Cook for at least 1 hour over low heat, until reduced by half, before straining.Stock can be frozen in sealable bags or containers, so make a batch and cook up later!  <h2>Root veg peel fritters </h2>Potato and carrot peelings can be quickly fried into tasty fritters. Perfect with your favourite sauce to dip. 1. Mix together a couple handfuls of root vegetable peelings, such as potato and carrot, with some chopped herbs such as parsley, a pinch of smoked paprika, an egg and enough flour to bind the mixture. Fry in hot oil for a couple minutes on each side, until crisp.2.
