Ingredients

2 oranges

300ml Casa Luis Cava Rosé Extra Dry

200ml Aperol Aperitif

2 x 150ml can Italian blood orange soda

900g ice cubes

4 sprigs of fresh mint

Method

Chill 4 large glasses in the fridge, pare 4 strips of zest from the oranges and set aside. Unless you have a blender big enough to hold all the ingredients, squeeze the juice from one orange into a high-speed blender and mix together in batches.

Add half of the other ingredients: the rosé sparkling wine, Aperol, blood orange soda water and ice. Whizz until blitzed and looks like ice slush.

Divide between two chilled glasses, garnish each with a twist of pared zest and a mint sprig. Repeat to make 2 more.
