Ingredients

1tbsp rapeseed oil

250g jumbo oats

50g chia seeds

50g pumpkin seeds

50g flaked almonds

50g desiccated coconut

2tsp cinnamon

2tbsp brown sugar

50g raisins

50g dried cranberries

4 Bramley apples, peeled, cored and roughly chopped

500g Frozen for Freshness Summer Fruits

250ml apple juice

2tbsp clear honey

Method

Preheat the oven to 160C/140C Fan/Gas 3. Line a baking tray with baking paper.

For the granola, put the oil, oats, chia seeds, pumpkin seeds, almonds, coconut, cinnamon and sugar on the tray and mix.

Bake for 25-30 mins until golden and crisp, tossing occasionally. Add the raisins and cranberries in the final 10 mins of cooking. Remove and cool completely.

To make the fruit purée put the apples, frozen fruit, apple juice and honey in a pan over a medium heat. Bring to a boil and simmer for 30 mins, stirring often, until the apples break down and the purée has thickened. Cool fully.

When ready to serve, layer a few spoonfuls of the granola and fruit purée in individual jars or glasses.
