Ingredients

1 Aubergine, halved and finely sliced into 5mm slices

250ml Milk

75g Plain Flour

250ml Olive Oil

½ tsp flaky Salt

1 tbsp Honey

2 sprigs Rosemary

Crusty Bread, to serve

Put the aubergine slices in a shallow dish and pour over the milk. Leave for 45 mins then drain. Pat away some of the excess liquid with kitchen towel.

Tip the flour onto a plate, season and dip in the aubergine slices to coat on both sides, one by one, putting them on a clean plate as you go. Once all the slices are coated heat the oil in a large, high-sided saute pan. When the oil reaches 160°C start frying the aubergine. Do this in small batches, cooking them for 3–5 mins or until crisp and starting to turn golden. Use tongs or a slotted spoon to place the fried aubergine on a tray lined with kitchen paper to absorb any excess oil.

When all of the aubergine is cooked, divide between 2 plates and season. Drizzle over honey and garnish with rosemary sprigs, crisped up in the aubergine pan.

Serve with crusty bread on the side.
