Ingredients

240g pack Extra Special 8 Rashers Unsmoked Dry Cured Back Bacon

4 sesame seed bagels, split

4 medium free-range eggs

1 large avocado

1 tbsp chopped coriander

1tbsp lemon juice

Method

Preheat the oven to 180C/160C Fan/Gas 4. Line a baking tray with baking paper.

Arrange the bacon on the lined ray so it's evenly spaced. Cook in the oven for 12-15 mins, until crisp and browned at the edges.

The bagel-top holes should be about 3cm across; trim to widen, if necessary. Put the bagel halves cut-side down on a separate baking tray lined with foil. Crack 1 egg into each top hole. Bake for 7-10 mins until the egg is just set and the bagels are toasted.

Meanwhile, mash the avocado with the coriander and lemon juice. Season with black pepper.

Spread the avocado on the bottom halves of the bagels and top each with 2 bacon rashers. Sandwich with the tops and sprinkle with pepper to serve.
