Ingredients

Oil, to grease

1 Pineapple, cut into wedges

1 Watermelon, cut into wedges

3 Peaches, cut into wedges

125g Mascarpone

125g Plain yogurt

1 tbsp Icing sugar

3 tbsp Dark rum

Method

Mix together the boozy mascarpone ingredients. Cover and chill until needed.

Lightly oil the bars of your barbecue. Cook the fruit over a high heat for 4-5 mins per side (in batches if needed), turning carefully with tongs and a thin spatula, if the fruit is sticking..

Arrange the fruit on a platter and serve with the boozy mascarpone, or plain yogurt, if you prefer. Dark rum can be switched out for elderflower cordial for an alcohol-free version.
