BBQ Fruit with Boozy Mascarpone

Strictly for adults, this dessert needs its own section of the barbecue kept free for grilling. Not enough space? Remove the grill, let it cool, then scrub with scrunched-up foil when the mains are done.?

Ingredients

Oil, to grease

1 Pineapple, cut into wedges

1 Watermelon, cut into wedges

3 Peaches, cut into wedges

125g Mascarpone

125g Plain yogurt

1 tbsp Icing sugar

3 tbsp Dark rum

Method

1
Mix together the boozy mascarpone ingredients. Cover and chill until needed.
2
Lightly oil the bars of your barbecue. Cook the fruit over a high heat for 4-5 mins per side (in batches if needed), turning carefully with tongs and a thin spatula, if the fruit is sticking..
3
Arrange the fruit on a platter and serve with the boozy mascarpone, or plain yogurt, if you prefer. Dark rum can be switched out for elderflower cordial for an alcohol-free version.
