Ingredients

1 Grower’s Selection Red Pepper, thinly sliced

½ Grower’s Selection Courgette, thinly sliced

1 Grower’s Selection Carrot, peeled and thinly sliced

400g pack Asda Ready Rolled Pizza Dough

1 clove garlic, crushed

½ x 400g tin Smart Price Chopped Tomatoes in Tomato Juice

125g pack Smart Price Mozzarella, drained and excess liquid squeezed out, then torn

125g Farm Stores Cherry Tomatoes, thinly sliced

Basil, chopped, to garnish

1tsp dried oregano

½tbsp rapeseed oil

Flour, to dust

1tbsp tomato purée

Preheat the oven to 200C/180C Fan/Gas 6.

Put the sliced red pepper, courgette and carrot on a large, lined baking tray. Drizzle with the oil, season with black pepper, then toss to coat. Pop in the oven for 25-35 mins until tender and just turning golden at the edges.

Dust your work surface and rolling pin with the flour, then roll out the pizza dough to slightly smaller than the baking tray. When the veggies are roasted, transfer them to a plate, then immediately put the dough on the lined tray. Pop in the oven for 5 mins – this will help to ensure a crispy base.

Meanwhile, for the hidden vegetable sauce, blitz the roasted veggies, garlic, chopped tomatoes and tomato purée in a blender until smoothly combined.

Remove the pizza from the oven and spread a thin layer of the sauce over the top. (If there’s any left over, it can be served with the pizza as a dipping sauce for the crusts.)

Scatter the torn mozzarella evenly over the pizza along with the cherry tomato slices. Sprinkle over the oregano.

Pop the pizza the oven for 15 mins, or until the base is crispy and the cheese is melted with golden-brown speckles. Garnish with fresh basil, allow to rest for 1-2 mins, then serve.
