Ingredients

½tbsp rapeseed oil

200g broccoli florets, finely chopped

1 carrot, finely grated

6 medium eggs

75g Asda 30% Less Fat Mature British Cheese, grated

1½tbsp plain flour

½tsp dried oregano

Method

Preheat the oven to 180C/160C Fan/Gas 4. Line a 24cm square dish with baking paper.

Heat the oil in a frying pan, then fry the broccoli for 3-4 mins, stirring, until starting to soften. Add the carrot and cook for 1 min, then tip into the dish.

Put the eggs in a large jug and whisk together. Add the grated cheese, flour and oregano, and mix again until smooth.

Pour the egg mixture over the broccoli and carrot, then bake for 15-18 mins, until the frittata is firm to the touch.

Cool for 5-10 mins in the dish. Cut into 8 pieces and serve 2 bars per person.
