Ingredients

500g Pork Mince

101g Red Onion, half diced, half thinly sliced

384g Mixed Peppers, thinly sliced

250g Cherry Tomatoes, diced

30g fresh Coriander, roughly chopped

15ml of Lime Juice & wedges to serve

10 Mini Wraps (2 spare)

150g Cheddar Cheese, finely grated

1 head round Lettuce, washed and torn to serve

1 tbsp Vegetable Oil

5g Paprika

2.5g Cumin

Method

Start by adding the pork mince and vegetable oil into a pan over a high heat. Leave to brown for 5 minutes, then break up and continue to fry. Reduce the heat slightly and add the thinly sliced onion & peppers. Continue to fry for 5 more minutes.

Whilst that’s frying away, prepare your salsa/ pico de gallo by adding the cherry tomatoes, ? of the coriander, lime juice and diced red onion into a bowl. Stir to combine and season with pepper.

To the frying pan, add the spices and cook for a further minute. Remove from the heat.

Preheat grill to 200°C.

Place the tortillas over two baking trays and top with the pork filling. Scatter over some finely grated cheddar and place under the grill for around 1-2 minutes, or until melted.

Top with the pico de gallo and an extra sprinkle of coriander. Optionally grate a little more cheddar over the top. Serve with lettuce as a side and dig in!
