Chicken katsu curry stir fry

We’ve revamped the classic chicken stir fry with Asda’s Katsu Curry Stir-fry Sauce. Mildly spiced and creamy, it’s warming as the days get colder.

Ingredients

1tbsp vegetable oil

500g pack diced chicken breast

600g pack mixed vegetable stir fry

2 cloves garlic, crushed

2 x 300g packs cooked Asda Egg Noodles

2 x 170g packs Asda Katsu Curry Stir-fry Sauce

3 spring onions, trimmed and thinly sliced, to serve

1 lime, quartered, to serve

light soy sauce, to serve (optional)

Method

1
Heat the oil in a wok or a large frying pan over high heat. Once hot, add the chicken and stir fry for 6-8 mins until golden brown all over, lowering the heat slightly if needed.
2
Once the chicken is golden brown, add the vegetables and continue to stir fry for a further 3-4 mins, until the vegetables are just tender and golden and the chicken is cooked through.
3
Add the garlic and stir fry for a further minute before adding the noodles and katsu sauce. Toss everything together well and continue to cook for 1-2 mins, until everything is piping hot.
4
Divide the stir fry between 4 dishes, top with the spring onion and lime wedges before serving with soy sauce if you like.
