Ingredients

2 x 400g tins Asda Chickpeas in Water, drained and rinsed

8tbsp Asda Real Mayonnaise

Bunch Grower’s Selection Dill, roughly chopped

¼ red onion, finely chopped

Juice ½ Grower’s Selection Loose Lemon

198g tin Asda Naturally Sweet Sweetcorn in Water, drained

1tbsp Asda Capucine Capers

8 slices Extra Special Superseeded Sliced Bread

1 Grower’s Selection Little Gem Lettuce, washed and torn

1 beef tomato, thinly sliced

Method

Put the chickpeas in a large mixing bowl and crush roughly with a potato masher or fork so that they are half mashed and half whole, for varying texture.

Add 4tbsp of the mayonnaise, the dill, red onion, lemon juice, sweetcorn and capers, and stir to combine. Season with black pepper.

Spread the remaining mayo over one side of each of the bread slices. In batches, put the bread, mayo-side down, in a nonstick frying pan and gently fry until golden brown and crispy. No need to fry the other side as this could over-toast your bread – but if you like your sandwich super crispy, go ahead!

Assemble the sandwiches with the crispy side of the bread facing outwards. Start with a layer of lettuce and then a generous helping of the chickpea mayo mixture, followed by slices of beef tomato. Cut each sandwich in half to serve.
