Ingredients

1 tbsp rapeseed oil

600g Asda frozen vegetable base mix

330g mixed peppers, diced

400g Plant Based mince

50g tomato puree

400g tinned chopped tomatoes

400g tinned Mexican beans, drained

45g chilli con carne pack

Sprinkle of fresh coriander, chopped

500g wholegrain microwave rice

Method

In a large saucepan add the oil and heat over a medium heat.

Once heated, add the vegetable base mix and cook for 5 minutes.

Next, proceed to add the mince, breaking it up in the pan as you cook for roughly 5 minutes until golden brown.

When the mince is ready, toss in the remaining ingredients, except the coriander. Cook on a low heat for 20 minutes or until it has reduced by half.

Just before this is ready, microwave the rice for 2 minutes and divide between each plate.

On each bed of rice, portion out the chilli and garnish with the chopped coriander accordingly.
