Ingredients

zest of 1 Lemon

50g Golden Caster Sugar

100ml Lemon Juice

250ml Clementine Juice

250ml Asda Extra Special Blended Malt Scotch Whisky

300ml Sparkling Water

Ice cubes

1 sliced Lemon

A few Rosemary sprigs

Start by making the lemon sugar. Mix the finely grated zest of 1 lemon with the caster sugar. Let sit, covered, for at least 1 hour (or overnight) before using. The lemon sugar really brings this drink together so it’s well worth making if you have the time.

When you’re ready to make the cocktail pour the lemon and clementine juices into a jug with the lemon sugar. Stir well to dissolve the sugar then strain into a punch bowl.

Add the remaining ingredients including the ice, lemon slices and rosemary sprigs. Serve with ice-filled tumblers.
