Ingredients

8 chicken thighs

200g cherry tomatoes

1 red onion, peeled and cut into wedges

10 baby potatoes

3 garlic cloves, peeled

1 handful fresh basil leaves

1tbsp olive oil

4 rashers unsmoked bacon, finely chopped

Green vegetables, to serve (optional)

Freshly ground black pepper

Method

Preheat the oven to 180C/160C fan/gas mark 4.

Place the chicken thighs, tomatoes, onion, potatoes, garlic and most of the basil in a large roasting dish. Drizzle with the oil, season a good twist of freshly ground black pepper and toss to coat.

Sit the chicken on top of the ingredients and cook in the hot oven for around 30mins.

After 30mins, sprinkle the bacon evenly across the dish and place back in the oven to cook for a further 15mins, until the bacon is crispy and the chicken is cooked through.

Serve with the remaining basil and freshly steamed greens.
