Ingredients

500g Sweet Potatoes, cut into long chips

1 tbsp Vegetable oil

4 Just Essentials by Asda Breaded White Fish Fillets (500g pack)

½ Savoy Cabbage, finely shredded

2 Spring Onions, finely sliced

75g Just Essentials by Asda Low Fat Natural Yogurt

½ Lemon, juiced and zested

4 Just Essentials by Asda White Rolls

15g fresh Coriander

Preheat the oven to 220°C/200°C fan/gas 7. Toss the sweet potato fries with the oil, season and spread on a large baking tray. Bake for 5 mins.

Place the fish fillets on another baking tray, and when the 5 mins is up, add to the oven on the shelf below the fries. Bake together for 20 mins more.

Meanwhile, make the coleslaw by mixing the shredded cabbage, spring onions, yogurt, lemon zest and juice.

Remove the fish fillet tray from the oven – the fish should be crispy and cooked through. Leave the fries in for a final 3–5 mins until golden and crisping, while you assemble the burgers.

Split the rolls and add some coriander sprigs to the bottom of each roll, before topping with a crispy fish fillet. Add some slaw then sandwich with the lids. When the sweet potato fries are ready, serve alongside the burgers with the remaining slaw.

Sandwich any leftover slaw with flaked, smoked mackerel in the last two soft rolls for a power-packed lunchbox filler.
