Ingredients

4tsp rapeseed oil

2 red onions, thinly sliced

2tsp Asda Easy Garlic

3 sprigs thyme

Splash balsamic vinegar (optional)

4 panini rolls, halved

120g feta, crumbled

60g wild rocket

200g green beans, halved

200g cherry tomatoes, halved

210g tin butter beans in water, drained and rinsed

1tbsp chopped chives

Juice ½ lemon

Method

Heat half the oil in a nonstick frying pan. Cook the onions over a low heat for 10 mins, until softened. Add the garlic, thyme and balsamic vinegar (if using). Season with black pepper, then cook for another 10-12 mins, until sticky.

Remove the thyme. Divide the onions between the bases of the rolls and top with the feta. Add the rocket and sandwich with the top of the rolls.

Brush each roll with the remaining oil. Heat a frying pan and fry 2 paninis at a time for 2-3 mins each side, pressing down with a spatula, until crisp.

Cook the green beans in boiling water for 2-3 mins, until tender. Drain and rinse under cold water. Toss with the tomatoes, butter beans, chives and lemon juice and season with black pepper.

Serve each person 1 panini cut in half with a couple of spoonfuls of the bean and tomato salad.
