Ingredients

242g pack Asda frozen 12 Candied Pigs in Blankets

3 large eggs

150ml semi-skimmed milk

20g caster sugar

1tsp vanilla extract

110g plain flour

1tbsp vegetable oil

10g unsalted butter

100g frozen cranberries

15g pistachios, chopped

100ml maple syrup, to serve

Icing sugar, to dust

Flatleaf parsley, torn, to serve

Method

Preheat the oven to 200C/180C Fan/Gas 6.

Cook the pigs in blankets according to pack instructions.

Put a large, oven-safe frying pan on the oven shelf below the pigs to preheat for 10 mins.

Beat the eggs, milk, sugar, vanilla and flour until smooth. Carefully remove the hot pan from the oven; add the oil and butter, swirling to coat the pan. Quickly pour in the batter and return to the oven. Bake for 20-22 mins until the pancake is well risen and a golden brown. Don't open the oven for the first 18 mins, or it may deflate.

Cook the frozen cranberries in a pan over a medium heat; add a small splash of water if needed.

Take the pancake out of the oven and fill with the cooked pigs in blankets and cranberries. Scatter with the pistachios and parsley. Drizzle with some of the maple syrup and dust the edges with a little icing sugar.

Transfer the pancake to a plate. Serve immediately, before it deflates, with the remaining syrup on the side.
