Ingredients

100g Granulated sugar

8-10 Basil leaves

Ice, crushed

50ml Gin

1/2 Lime

Method

First make a sugar syrup. This will keep in the fridge for several weeks to make more cocktails. Put 100g granulated sugar in a small pan with 100ml water. Heat very gently until the sugar is dissolved, then bring to the boil for 1 min.? Set aside to cool completely.

To make the cocktail, put 8-10 small basil leaves in a chilled glass tumbler and gently bruise 3-4 times with the end of a wooden spoon.

Fill with crushed ice, then pour in 50ml gin, 4 tsp sugar syrup and the juice of half a lime. Stir to combine.

Garnish with basil and ribbons of cucumber and serve.?
