Ingredients

ground black pepper

8 thin slices of ciabatta, toasted, to serve

4 tbsp extra virgin olive oil

1 large red onion, finely chopped

2 tbsp thyme leaves

300g beef, diced

12 small pork ribs

4 medium Italian-style pork sausages

3 x 400g cans of chopped tomatoes

2 tbsp tomato puree

8 basil leaves

fine sea salt

Method

Pour the oil into a large saucepan, place over a medium heat and tip in the onion with the thyme. Cook for 5 minutes, stirring occasionally with a wooden spoon.

Add the beef, pork ribs and sausages and continue to cook for 8 minutes. Make sure you turn all the meats, so they are sealed all over.

Now add the chopped tomatoes, tomato puree, basil and 100ml of hot water. Mix it all together, bring to the boil, then reduce the heat to a simmer. Season with salt and pepper, cover with a lid and cook very gently for 2 hours until the sauce is thick and shiny. Please make sure that you stir the sauce every 20 minutes, and add a little more hot water if you feel the sauce needs more moisture.

Serve hot in nice warmed rustic bowls, with toasted ciabatta and a good bottle of Italian red wine.
