Ingredients

550g Chicken Breast, sliced in half

1 Head of White Cabbage, diced (half at time)

Bunch of Fresh Basil

10 tbsp Salted Essentials Cashews

300g of Spinach

1 Wedge of Lemon per serving

½ Clove of Garlic, minced per serving

50g Spring Onion, thinly sliced

1 tbsp Vegetable Oil, for frying the chicken

1 tbsp Oil per serving

Black pepper, to taste

Method

Start by adding vegetable oil to a non-stick pan on a high heat. Fry the chicken for 4 minutes on each side until fully cooked. Season with black pepper and squeeze of lemon juice (a small wedge). Let cool then, refrigerate half and freeze the other half to eat for the later half of the week.

Dice half of the cabbage and leave the other half in wedges, ready to chop later on in the week. Store in a container in the fridge. Add the spinach into two containers lined with a paper towel and place in the fridge.

Trim the stems of the basil leaves slightly and place into a glass, filled slightly with water.

When it’s time to eat, to a blender, add 2 tbsp of salted cashews, a small handful of basil (? of the bunch), ½ clove of garlic, handful of spinach, 3 tbsp water and 1 tbsp oil. Season with pepper and blend.

Add two handfuls of chopped cabbage, a handful of chopped spinach and the green goddess dressing. Stir to combine. Top with chicken, spring onion and an extra crack of black pepper.
