Ingredients
175g raw quinoa
1 tsp veg stock powder or 1/2 stock cube, dissolved in boiling water
375g broccoli, cut into florets and stalk cut into cubes
130g cooked edamame or peas
1 tbsp wholegrain mustard
1 tbsp maple syrup
1 tbsp olive oil
1 tbsp cider vinegar
Method
1Rinse, drain and add your quinoa to a pan, along with the stock. Simmer with the lid on for 15-18 mins.
2Bring a separate pan of water to the boil and add the broccoli, cooking for 3-5 mins. Add the edamame or peas for the last 2 mins.
3Meanwhile, in a jar with a lid, add the mustard, maple syrup, olive oil and vinegar, and shake to combine.
4Drain the broccoli mix, then drop into a bowl of cold water to stop them cooking. Drain after a few mins.
5Finally, add the quinoa, drained broccoli mix and dressing into a bowl and stir to combine and coat all the ingredients. Serve.
