Ingredients

350g Asda Butcher’s Selection diced lamb, any excess fat removed

1 onion, roughly chopped

1 lime, juiced

¼ scotch bonnet, finely chopped (optional)

2 garlic cloves, finely crushed

3tsp mild curry powder

3 sprigs fresh thyme, leaves picked

2 spring onions, chopped

1tsp mild chili powder

1tsp ground ginger

1tsp ground turmeric

1tsp rapeseed oil

200g baby new potatoes, roughly chopped

2 large carrots, roughly chopped

½ white cabbage, finely shredded

1 reduced salt chicken stock cube (use gluten free and vegan if required), dissolved in 500ml boiling water

Add the lamb, onion, lime, scotch bonnet (if using), garlic, 2 tsp curry powder, thyme, spring onions, chili powder, ginger and turmeric to a large bowl and mix until evenly coated. Leave to marinate in the fridge for 20 mins, or ideally overnight.

Heat the oil in a large saucepan over a high heat. Add the remaining 1 tsp curry powder and, when the spice is fragrant, add the lamb and cook it for 10 minutes until brown all over.

Add the potatoes, carrots, white cabbage and stock to the pan, cover with a lid and cook for 30 minutes, stirring occasionally, until the vegetables are tender and the lamb is cooked throughout.
