Ingredients

500g Grower’s Selection British Baby Potatoes

300g Grower’s Selection Shallots

2 carrots

2tsp rapeseed oil

1 lemon

1 lime

4 cloves garlic

2 bay leaves

Method

Preheat the oven to 200C/180C Fan/Gas 6.

Halve potatoes and shallots. Slice carrots lengthways. Put on a baking tray, drizzle over rapeseed oil and toss to coat.

Add the zest of a lemon and of a lime, cloves of garlic and bay leaves. Season with freshly ground black pepper.
