Ingredients

1 aubergine, washed and cut into 1cm slices

1tbsp rapeseed oil

250g potatoes, peeled and cut into slices about 1/2 cm thick

500g 5% fat beef mince

1 onion, finely chopped

2 garlic cloves, grated

1tsp mixed herbs

2 400g tins of chopped tomatoes

300ml natural yogurt

125g mozzarella, drained and sliced

Preheat the oven to 200c/180c fan/gas 6.

Lay the aubergine slices on a baking tray, drizzle with the oil – reserving 1tsp for the mince - and place in the oven for 20 minutes, until soft, turning them over half-way through.

Meanwhile, bring a pan of water to the boil, add the potato slices and cook for 10 minutes, then drain.

Fry the mince in the remaining 1 tsp of oil, over a medium heat, until browned.

Add the chopped onion, garlic and mixed herbs, and cook for a further 2-3 minutes. Then add the chopped tomatoes and simmer for 5 minutes.

In a 20cm ovenproof dish, arrange about half of the aubergine to cover the bottom. spoon over about half of the mince and layer with the rest of the aubergine. Top with the rest of the mince then layer the top with the potatoes. Layer over with the yogurt and then sprinkle over the cheese. bake in the oven for 35-40 minutes. Let the dish sit for 10 minutes before serving.
