Ingredients

2 x 170g tins John West Crab Meat Chunks

150g Asda Classic Mash

3 spring onions

50g fresh breadcrumbs (made from 2 slices white bread)

2tsp rapeseed oil

Method

Preheat the oven to 200C/180C Fan/ Gas 6. Line a baking tray with baking paper.

Drain the tins of crabmeat. Break up the chunks and mix with the mashed potatoes and spring onions. Season with black pepper.

Shape the mixture into 16 mini cakes and then coat, one at a time, in the breadcrumbs.

Put on the baking tray, brush the tops of the crab cakes with the oil and bake for 15-20 mins until golden. Garnish with the rest of the spring onions before serving.
