Ingredients

465g pack The Bakery at Asda Jam Roly Poly

150g Unsalted Butter, plus extra for greasing

150g White Chocolate, cut into chunks

250g Soft Light Brown Sugar

3 medium Eggs, lightly beaten

2 tsp Vanilla Extract

170g Plain Flour

½ tsp Baking Powder

100g Asda Frozen Raspberries

Method

Preheat the oven to 180°C/160°C fan/gas 4. Grease and line a 20x24x5cm baking tin.

Cook the jam roly poly for 30 mins in the preheated oven. Leave to cool and cut into approx. 1cm thick slices.

While the roly poly is cooling, melt the butter and 100g white chocolate in a heatproof bowl set over a pan of simmering water. Once melted, remove from the heat and whisk in the sugar, eggs, vanilla, flour and baking powder.

Pour into the prepared tin, top with slices of roly poly and poke in the raspberries and remaining white chocolate.

Bake for 30–35 mins until lightly golden, set on top, but still gooey in the middle. Leave to cool fully then cut into 16 squares. Store in an airtight container for up to 5 days.
