Ingredients

2 King Edward potatoes (300g), skin on and scrubbed, cut into skinny fries

1 tbsp Sunflower Oil, for the chips

¼ tsp Paprika, for the chips

2 tsp Olive Oil

2–3 Shallots, sliced (approx 75g

1 Carrot, finely diced

150ml White Wine

500g pack Asda Rich Roasted Garlic Butter Mussels

5g fresh Thyme leaves

5g Flat Leaf Parsley, chopped

Method

Start by making the chips. Soak the chipped potatoes in a bowl of cold water for 10 mins.

Heat oven to 220°C/200°C fan/gas 7. Line a large baking sheet. Drain the fries then pat dry with kitchen paper. Add 1 tbsp sunflower oil, the paprika and seasoning. Mix well to coat then tip out in a single layer onto your prepared tray. Bake for 20–25 mins, turning halfway through, until golden and crisp.

When the fries are almost ready put a large saucepan on the hob over medium heat and add 2 tsp olive oil and the shallots and carrot. Cook for 5 mins or until softened. Add the white wine and simmer until reduced by a third.

Meanwhile cook both sachets of mussels in the microwave according to pack instructions. Tip the cooked mussels and their cooking liquid into the white wine sauce and stir to coat then straight away tip into your serving dish.

Scatter with the herbs and serve immediately with the skinny fries.
