Ingredients

2 Ripe Peaches

15g Unsalted Butter

3 tbsp Asda Clear Honey

250g pot Asda Ricotta Cheese

1 tsp Almond Essence

100g Raspberries, chopped

4 slices Asda White Farmhouse Bread, or similar

10g Fresh Thyme, to serve

Cut the peaches in half, discard the stone then slice. Place the butter in a frying pan set over a medium heat.

Once the butter has melted, add the peaches and 2 tbsp honey to the pan. Fry for 3–4 mins until the peaches are starting to caramelise, then turn and repeat until all sides are golden.

Meanwhile, whisk together the ricotta, almond essence and remaining 1 tbsp honey in a small bowl until smooth. Stir through the raspberries.

Toast the bread until golden. Top each slice with a generous spoonful of sweetened ricotta followed by the caramelised peaches. Add the picked leaves of some fresh thyme to serve, with an extra drizzle of honey if desired.
