Ingredients

10 Medjool dates

5tsp Whole Earth Smooth Peanut Butter

150g dark chocolate (at least 70% cocoa solids)

½tsp demerara sugar, to decorate

Method

Use a sharp knife to make a lengthwise cut in each date. Gently lift out the stones and discard them, keeping the rest of the date in one piece. Arrange the dates on a baking tray lined with nonstick paper.

Stuff each date with ½tsp of the peanut butter, pushing it down gently to fill the gap left by the stone.

Place the filled dates in the freezer for 20 mins to firm up.

Meanwhile, put the chocolate in a heatproof bowl over a pan of barely simmering water – don’t allow the base to touch the surface of the water.

Remove from the heat before the chocolate is completely melted, then stir until it is smooth and glossy.

Take the dates from the freezer. Put 1 in the bowl and cover with chocolate – use 2 small spoons to turn it over until completely coated.

Return to the tray and sprinkle with a pinch of the demerara sugar, to decorate.

Repeat with the remaining dates, chocolate and demerara.

Return to the freezer for 30 mins. Enjoy straight from the freezer, or store in an airtight container for up to 1 week.
