Ingredients

1 onion (chopped)

1tbsp olive oil

1 apple (grated)

500g pork mince

1 carrot (grated)

3tbsp breadcrumbs

2tbsp Dijon mustard

1tbsp chopped sage

Method

Preheat the oven to 200C/ 180C Fan/Gas 6.

Fry the onion in the oil for 3-4 mins or until soft but not browned. Set aside to cool.

Squeeze any excess juice from the apple and put the flesh in a bowl with the mince, carrot, breadcrumbs, mustard and sage. Mix well – this is easiest if you use your hands.

Shape the pork mixture into 4 patties and cook in the oven on a baking sheet for 25-30 mins or until done all the way through – check the meat is not pink in the middle. Serve in the rolls with salad.
