Ingredients

850g Frozen Spinach

1.5 tbsp Fresh Ginger, finely grated

1100g (2 tins) New Potatoes, chopped in half/quarters

2 Onions, thinly sliced

400ml Coconut Milk

5 Mini Naans, toasted

1 tsp Garlic Granules

1 tbsp Curry Powder

1 tbsp Vegetable Oil

100ml Vegetable Stock

Pepper, to taste

Method

Start by adding the thinly sliced onion and vegetable oil into the pan. Season with pepper and gently fry on a medium heat.

After around 3 minutes, add the fresh ginger and continue to fry for two minutes. Then add the curry powder and garlic powder into the pan.

Fry for a further two minutes to bloom the spices and then add the frozen spinach. Cover with a lid to defrost and loosen for 8 minutes. After 8 minutes, stir & add the potato and coconut milk and vegetable stock.

Season again with pepper and cook for a further 5-8 minutes over a medium/low heat.

Serve a portion of curry with a toasted naan & enjoy!
