Ingredients
2 Carrots, peeled
2 Raw beetroots, peeled
1 Red cabbage, cored and finely shredded
1/2 Red onion, finely sliced
300g Natural full-fat yogurt
1 Lemon, juiced
2 tbsp Wholegrain mustard
Method
1Cut the carrots and beetroots into matchsticks (a mandolin or food processor attachment is easiest). Put into a large bowl and mix through the cabbage and onion.
2In a separate bowl, mix the yogurt, lemon juice and mustard. Add to the vegetables and mix to combine. Chill until needed.
