Ingredients

400g Asda Frozen Mixed Vegetables

2 spring onions

200g Asda Classic Mash

20g Parmesan

1 egg yolk

1 tbsp plain flour

1 tbsp oil

2 tbsp reduced-fat crème fraÎche

1 pinch of cayenne pepper

80g washed baby leaf spinach

Method

Preheat the oven to 180C/160C Fan/Gas 4.

In a large bowl, mix together 400g Asda Frozen Mixed Vegetables, 2 spring onions, finely sliced, 200g Asda Classic Mash, 20g Parmesan, finely grated, 1 egg yolk and 1tbsp plain flour.

With wet hands, shape the mixture into 8 fritters.

Put on a plate and chill until ready to cook.

Heat 1tbsp oil in a frying pan. Cook the fritters for 5-6 mins on a medium-low heat until golden- brown on the outside and piping hot all the way through.

Cook in 2 batches, reserving the oil after the first batch.

Mix 2tbsp reduced-fat crème fraÎche with ¼tsp cayenne pepper.

Stack 2 fritters on each plate.

Divide 80g washed baby leaf spinach between the plates, add a good dollop of the seasoned crème fraîche, then serve immediately.
