Ingredients

3 eggs

100g plain flour

140ml semi-skimmed milk

1tbsp vegetable oil

50g light cheddar, grated

60g sliced ham

1tsp parsley, chopped

Method

Preheat the oven to 220°C/200°C fan/gas 7. Using a 20cm ovenproof frying pan, add the vegetable oil and place in the oven to heat up while you make the batter.

Combine the eggs, flour, milk and a pinch of salt in a jug and whisk well to combine, making sure the batter is smooth with no lumps.

Once the oven is up to temperature and the oil is hot, carefully pour the batter into the pan and return it immediately to the oven. The batter should sizzle as it goes in. Cook for 20 mins and don’t be tempted to open the oven or the batter will collapse.

Once cooked, remove from the oven and top with the ham and cheese. Reduce the oven temperature to 180°C/160°C fan/gas 4 and return to the oven, allowing the cheese to melt for 3–4 mins. Remove from the oven, sprinkle over the parsley and serve.
