Ingredients

150g crusty bread

1½ tbsp olive oil

2 tbsp finely grated Parmesan, plus extra for shaving (optional)

125g low-fat crème fraîche

1 lemon, zested and juiced

1 garlic clove, finely grated

1 pack Asda Sweet & Crisp Romaine Lettuce Hearts, chopped

Asda Peppery Kiln Roasted Mackerel Fillets, skinned and torn into chunks

10g fresh chives, finely chopped

Method

Heat the oven to 200°C/180°C fan/gas 6. To make the croutons, tear the bread into chunks and in a mixing bowl toss with the oil and 1 tbsp of the grated Parmesan, making sure the pieces are well coated. Spread on a baking tray and bake for 15 mins, turning halfway through, until crisp and golden. To air-fry your croutons instead, spread evenly in the basket then bake at 200°C for 5–7 mins until golden and crispy.

In a small bowl, mix the crème fraîche, remaining tbsp of grated Parmesan, lemon zest and juice, grated garlic and a little seasoning.

Arrange the chopped lettuce on a serving plate and top with the chunks of mackerel and the crispy croutons. Drizzle over the dressing, shave over some Parmesan, if using, and sprinkle on the chives.
