Ingredients

2kg Potatoes

2 x 400g Chopped Tomatoes

139g Red Onion, sliced into thin wedges

216g trimmed Green Beans, roughly sliced

25g of Fresh Parsley, roughly chopped

8 Pork Sausages, sliced into bite sized pieces

2 tbsp Vegetable Oil

Preheat the oven to 200°C fan/Gas Mark 7.

Cut each potato in half then quarter each half (aim for bite size pieces, roughly all the same size).

Add your potatoes into a large/deep baking tray along with the vegetable oil. Use your hands to evenly coat, then season with pepper and pop in the oven for 45 minutes stirring halfway through the cooking time.

When this time is up, add the chopped tomatoes, red onion, green beans, and half of the parsley into the pan. Stir to combine and top with the sausages.

Poke the sausages with a fork to allow the fat to render and pop the tray back in the oven for 30 minutes stirring halfway through the cooking time.

After 30 minutes, test the potatoes are cooked through, and the sausage pieces are piping hot.

Top with fresh parsley and an extra sprinkle of black pepper. Serve up and enjoy!
