Ingredients

150g Strawberries, hulled, plus extra to serve, sliced

50g Raspberries

1 tbsp Balsamic Vinegar

½ Lemon, zest only

25ml Extra Virgin Olive Oil

50ml Water

A small handful of Basil, chopped

90g Mixed Baby Leaf Salad, to serve

Method

Blitz the strawberries, raspberries, balsamic and lemon with a little seasoning. Drizzle in the oil, pulsing all the time gradually until combined. Add the water and basil and blitz briefly until finely chopped into the dressing.

Season to taste then serve drizzled over some fresh salad leaves and extra strawberries.

Serving suggestion: Serve with peppery salad leaves like rocket, mozzarella and parma ham. This sauce is also delicious as a dip for batons of cucumber and celery and sliced peppers.
