Ingredients

225g self-raising flour

1tsp baking powder

1tsp cinnamon

125g Alpen muesli, plus 2tbsp extra to top

3tbsp hundreds & thousands

175ml milk

2 eggs

4tbsp clear honey

Your mum’s favourite jam, to serve

Method

Preheat the oven to 200C/180C Fan/Gas 6. Line 6 holes of a muffin tin with paper cases.

Sift the flour, baking powder and cinnamon into a bowl. Add the Alpen and the hundreds & thousands.

In a separate bowl, beat together the milk, eggs and honey. Pour the dry ingredients over the milk mixture and stir until just combined. Spoon into the muffin cases and sprinkle on the remaining Alpen. Bake for 18-20 mins until golden on top.

Allow to cool. Serve the jam on the side, in a pretty pot or small dish.
