Ingredients

155g pack Butcher's Selection Unsmoked Lean Diced Bacon Pieces

326g tin Asda Sweetcorn in Water, drained

1 small courgette, chopped

2tbsp chopped basil

4 spring onions, chopped

3 eggs, beaten

100g plain flour

½tsp cayenne pepper

1tsp baking powder

1tsp rapeseed oil

2tbsp reduced-fat soured cream

1 lemon

2 tomatoes, chopped

1 avocado, peeled destoned and sliced

Extra basil, to serve

Method

Fry the bacon pieces on a medium heat for 10 mins until crisp. Drain off any fat.

In a large mixing bowl, mix the bacon with the sweetcorn, courgette, chopped basil, spring onions, eggs, plain flour, cayenne pepper and baking powder.

Heat the oil in a large, nonstick frying pan on medium. Drop in 2tbsp of the mixture for each fritter. Fry for 2-3 mins each side until golden.

Mix the soured cream with the zest from the lemon. Cut the rest of the lemon into wedges.

Divide the tomatoes, avocado, soured cream and the lemon wedges between 4 plates. Serve with 2 fritters per person, sprinkled with basil and seasoned with pepper.
