Ingredients

100g Asda Mild and Tender Baby Spinach

220g Extra Special Baby Plum Tomatoes, halved

375g Asda Ready Rolled Puff Pastry

60g Asda Goat's Cheese, crumbled

1 egg, beaten

Method

Preheat the oven to 190C/170C Fan/Gas 5.

Place the spinach in a saucepan over a low heat, cover with a lid and steam until wilted. Pour into a sieve, leave to cool, then squeeze out any excess liquid.

Drain any excess liquid off the tomatoes and pat dry with kitchen paper.

Roll the pastry onto a baking tray and lightly core a 1cm border around the edge.

Layer the spinach and tomato slices onto the pastry and crumble on the goat’s cheese.

Glaze the border with the beaten egg and bake on the top shelf of the oven for 30-40mins until golden, risen and the tomatoes are cooked. Serve warm or cooled.
