Ingredients
2 x 500g packs Butcher’s Selection Pork Rib Racks
1 large onion, finely chopped
2 cloves garlic, crushed
3 bay leaves
800ml Chosen by you Cola
1tbsp rapeseed oil
1tbsp Heinz 50% Less Sugars & 25% Salt Tomato Ketchup
2tbsp Asda Chipotle Paste
1tbsp black treacle
1tbsp Worcestershire sauce
Method
1Preheat the oven to 160C/140C Fan/ Gas 3. Put the ribs in a baking tray with half the onion, 1 clove garlic and the bay leaves. Pour over 600ml of the cola and cover tightly with foil. Bake for 2.5 to 3 hrs until tender.
2Fry the rest of the onion and garlic in the oil for 4-5 mins until soft but not coloured. Add the ketchup, chipotle paste, treacle, Worcestershire sauce and remaining cola. Bring to the boil and simmer for 10-15 mins until syrupy.
3Preheat the barbecue or grill to medium. Remove the ribs from the pan and discard the cooking liquor. Brush with the sauce and barbecue or grill 5-10 mins on each side, brushing with the sauce as you go. Rest for a few minutes before slicing.
