Ingredients
1 Onion, finely sliced
2 Garlic cloves, finely chopped
2 tsp Cooking oil
800g Frozen broccoli, cauliflower & carrot
250g Potatoes, washed, peeled and diced
1 Vegetable stock cube, dissolved in 300ml boiling water
1 Pataks Korma Cooking Sauce
300g Long grain rice
Method
1Begin by heating 2 Tbsp of oil in a large saucepan and fry off the onions and garlic for 2 minutes until fragrant and translucent.
2Next add vegetable stock, diced potatoes & Patak’s Korma cooking sauce and cook covered for 30-35 minutes, turning the heat to a simmer after 25 minutes and adding in the frozen vegetables for the last 10 minutes.
3Cook until the potatoes and vegetables are tender. ensuring to stir periodically so that the curry doesn’t catch. Remove the lid for the last 10 minutes of cooking.
4Whilst the curry is cooking, cook the rice as per the pack instructions ready for serving.
5Serving suggestion, why not serve the curry with a dollop of plain yoghurt.
