Ingredients

1 lemon

1 clove garlic

2tsp chopped parsley

8 Butcher’s Selection British Chicken Breast Mini Fillets

1 Baby Gem lettuce

4 wholemeal burger buns

2 tomatoes (sliced)

Baked sweet potato chips

Light mayonnaise

Method

Preheat the oven to 200C/180C Fan/Gas 6. Cut the lemon in half, and squeeze its juice into a small bowl. Crush the clove of garlic into the bowl. Add the chopped parsley, along with a pinch of freshly ground black pepper.

Pour the contents of the bowl into a sandwich bag and add the chicken. Seal the bag and, with your hands, mix the ingredients together so the chicken is coated. Remove the fillets and put on a baking tray. Bake in the oven for 15-20 mins, until cooked through.

Remove the chicken from the oven and set aside. Pull the leaves off the lettuce and wash under cold water. Pat dry with kitchen paper. Cut the buns in half. Fill with the tomato, lettuce and chicken. Serve with baked sweet potato chips and mayo
