<p>Meet Jasmin Cox-Williams, mum to gold medalist and international para-athlete Kadeena Cox MBE. Kadeena’s made quite the name for herself, having competed in sport since she was at school and accumulating an impressive collection of medals. Of course, keeping so active means needing to eat well – and that’s where Jasmin comes in.</p><p>Having seven children (Kadeena is number three!) means having a lot of mouths to feed. Luckily, Jasmin has always been passionate about cooking, and used to run a Caribbean restaurant in Leeds with her mum and sister. We asked Jasmin if she’d share three of para-athlete Kadeena’s favourite recipes with us.</p> <p>Jasmin says: “These are simple recipes with my own added twist that Kadeena has loved since she was little, and she still cooks them today for her own friends. Kadeena has to follow a very strict diet with her training regime, but when she comes home from Tokyo, we will definitely celebrate with her favourite childhood dishes.</p><p>Feeling inspired?
