Ingredients

300g orzo apsta

300g frozen broad beans

1 leek, thinly sliced

3 rashers Butcher's Selection Smoked Streaky Bacon, chopped

1tsp rapeseed oil

1 lemon, zested and sliced

40g Parmesan, grated

10g basil, leaves torn

Method

Bring a large pan of water to the boil. Add the orzo and cook for 5 mins.

Add the beans, bring back to the boil and cook for 2 mins. Add the leek. Cook for 2 mins. Drain, reserving 100ml of the cooking water.

Meanwhile, fry the bacon in the oil, on a medium heat, for 5-7 mins until crisp.

Reduce the heat. Add the pasta and veg to the frying pan, along with the lemon zest and half the Parmesan.

Stir through the reserved cooking water. Cook for 1-2 mins until thickened.

Divide between 4 plates. Sprinkle with the remaining Parmesan, the basil leaves and black pepper. Serve with the lemon slices.
