Ingredients

1tsp rapeseed oil

1 small leek, sliced

1 small courgette, sliced

1tbsp reduced-fat pesto

1 lemon, ½ juiced and ½ sliced

1 rasher smoked streaky bacon

260g pack Extra Special Cod Loin

Method

Preheat the oven to 200C/180C Fan/Gas 6. Lay a large sheet of foil on a baking tray and brush with the rapeseed oil.

In a bowl, toss the leek and courgette with the pesto and lemon juice. Season with black pepper and heap in the centre of the foil. Arrange the lemon slices on top.

Wrap the bacon around the cod fillet. Set the fish on top of the lemon slices, with the bacon seam underneath.

Fold up the sides of the foil and crimp to seal into a parcel. Bake for 20 mins, until the fish is tender and flaky and the vegetables are cooked. Transfer to a plate and season with black pepper to serve.
