Ingredients

1 large red onion, finely sliced

2 tbsp cider or wine vinegar

1 tsp caster sugar

1tbsp groundnut oil

1tbsp cumin seeds, lightly crushed

1 tbsp chipotle paste

600g left-over Bolognese

400g can Asda taco mixed beans in a spicy tomato sauce

12 hard taco shells or Asda soft mini tortilla

2 Little Gem lettuce, finely sliced

1 large avocado, cut into small cubes

30g fresh coriander, roughly chopped

200g tomato salsa

80g Asda fiery grated cheese blend

8 tbsp reduced fat soured cream

Extra coriander & lime wedges, to serve

To make the quick onion pickles, in a small bowl mix together the red onion, vinegar and sugar and set aside.

Heat the groundnut oil in a large saucepan over a medium heat and fry the cumin seeds for 30 seconds or until they sizzle and smell fragrant. Add the chipotle paste, left-over Bolognese and taco bean mix, and cook for 10 mins, until heated through. Heat the taco shell or tortilla according to the pack instructions.

In a large bowl, toss together the Little Gem, avocado and coriander.

To serve, take all the elements to the table for friends to build their own. Fill each taco with a few spoonfuls of the Bolognese mix, top with some of the lettuce avocado mix, a spoon full of salsa and sour cream and a sprinkle of the spicy cheese. Add a few of the pickled onions slices and a squeeze of lime. Enjoy with plenty of napkins on the side!
