Ingredients

180g (2 bags) mixed salad

1.5 kg butternut squash, peeled, de-seeded & sliced into one inch cubes

495g of pink apples, sliced into cubes

200g Greek style cheese, crumbled

1 lemon, sliced into wedges to serve

2 tbsp + 1 tbsp per serving olive oil

Pre-heat the oven to 200°C/220°C/Gas Mark 7.

Place the butternut squash onto a roasting tray. Coat with 2 tablespoons of olive oil & season generously with pepper. Stir to ensure all of the pieces are coated in oil and pop in the oven.

Cook for 35 minutes. Give the tray a shake/stir halfway through. Once roasted, transfer onto a plate to cool for 10 minutes.

Serve a portion of salad leaves with a drizzle of olive oil. Toss to combine and serve a portion of cubed apple, butternut squash and a crumble of feta. Top with a lemon wedge to squeeze over your meal with a crack of black pepper. Enjoy!
