Ingredients

150g Unsalted Butter, diced

150g Soft Light Brown Sugar

50g Golden Caster Sugar

1 tsp Almond Extract

2 Eggs

150g Bake by Asda Plain Flour

50g Ground Almonds

½ tsp Bake by Asda Baking Powder

100g White Chocolate, chopped

75g Dried Cherries, roughly chopped

3 tbsp Morello Cherry Conserve

30g Flaked Almonds

Preheat the oven to 180°C/160°C fan/gas 4. Grease and line the base and sides of a 20cm square tin with baking paper.

Melt the butter in a heavy bottomed saucepan over a low-medium heat. Continue cooking the melted butter, swirling the pan from time to time for another 2 mins until it begins to smell of toasted nuts and the milk solids separate and become golden brown. Tip the butter into a large mixing bowl and leave to cool for 3–4 mins.

Add both sugars and the almond extract to the melted butter and whisk to combine using a balloon whisk. Add the eggs and whisk again to combine.

Sift the plain flour, ground almonds, baking powder and a pinch of salt into the bowl. Add the chocolate chunks and dried cherries and use a rubber spatula to mix thoroughly through the batter. Spoon the mixture into the lined tin and spread level.

Dollop the cherry conserve over the top of the blondies and lightly swirl into the mixture using a teaspoon. Scatter with flaked almonds and bake for 30–35 mins until risen and golden brown. Leave to cool completely before cutting into neat little squares.
