Ingredients

100ml Asda Cherry Juice Drink

100g frozen morello cherries

50ml coconut milk

50ml Asda Coconut Bay

25g golden caster sugar

2–3 drops almond extract

100ml whipping cream, optional

2 cherries

1 tsp desiccated coconut

Method

Start by making the almond syrup. Put the caster sugar in a saucepan with 25ml water and heat gently over a low heat until the sugar has dissolved, and the mixture is simmering. Turn off the heat and allow to cool. Stir in 2—3 drops of almond extract.

When you’re ready to make the cocktail, whip up the cream and set aside. For speed you can also use squirty cream, if you like, instead of whipping the cream yourself.

Put the cherry juice, frozen cherries, coconut milk and Coconut Bay in a blender. Add 20–25ml prepared almond syrup and a small handful of ice and blend until smooth.

Fill 2 tall glasses or sundae glasses with ice and pour in the cocktail. Top with cream and garnish with a cherry and a sprinkling of desiccated coconut. Serve immediately.
